
In a delicious fusion of culture and cuisine, the Tobago Tourism Agency Limited (TTAL) teamed up with the Tobago Hospitality and Tourism Institute (THTI) to deliver an unforgettable culinary showcase during its recent German Roadshow, which hosted in partnership by TTAL and the Barbados Tourism Marketing Inc. (BTMI). Spanning the cities of Berlin, Munich, and Frankfurt, this culinary showcase was a standout feature of the three-city tour which brought Tobago’s authentic charm to over 200 German tour operators, travel agents and travel media.
At the heart of this cultural experience was Chef Arthur Patrick, whose passion for Tobago’s culinary heritage is as bold as his flavours.

After the event, we caught up with Chef Patrick who discussed how food became his way of sharing Tobago with the world, and why he believes our island’s cuisine is one of the most powerful storytellers in Caribbean tourism.

What did it mean to you to represent Tobago’s culinary culture on an international stage like the German Roadshow?
“It was an incredible honour to represent Tobago on such a large international platform. For me, food is more than just sustenance, it’s a powerful expression of our culture, our people, and our island’s spirit. Being able to share Tobago’s culinary identity with audiences in Berlin, Munich, and Frankfurt was deeply meaningful. It gave me the chance to showcase our traditions, tell our stories, and create a sensory connection between Germany and our island.”
What dishes or flavours did you share with audiences in Germany, and how were they chosen?
“I featured a range of dishes that reflected both the traditional and evolving nature of Tobagonian cuisine. This included elements like curried crab and dumpling, cou-cou with calaloo, dasheen Ponche de Creme, Fish Souse and stew beef just to name a few items. These dishes were chosen for their bold flavours, their cultural significance, and their ability to travel well and be reinterpreted in a demo setting. I wanted each bite to evoke the essence of Tobago, sun, sea, and bold spices.”

How does the food of Tobago reflect its people, history, and lifestyle?
“Tobago’s food is a beautiful mosaic of our diverse heritage, African, Indigenous, European, and Indian influences all woven into every dish. It reflects our resilience, creativity, and strong connection to the land and sea. Our cuisine tells stories of our ancestors, celebrates seasonal rhythms, and highlights our laid-back yet vibrant lifestyle. Whether it’s a roadside roti or Sunday Macaroni pie and stewed chicken, there’s always a sense of community, celebration, and pride behind every plate.”
How did the partnership between the Tobago Hospitality and Tourism Institute and TTAL enhance this initiative?
“The collaboration between THTI and TTAL was a perfect example of how education and tourism can work together to elevate Tobago’s brand internationally. TTAL provided the platform and strategic reach, while THTI brought the culinary expertise and cultural authenticity. As a chef and educator, I was proud to be the bridge between both entities sharing not just food, but also the knowledge, training, and heritage that THTI instills in its students.”
What do you hope travel professionals in Germany took away from the culinary experience?
“I hope they left with a true taste of Tobago, not just on their palate, but in their hearts. I wanted them to see that Tobago is more than just a destination; it’s an experience grounded in flavour, culture, and warmth. I hope this event opened their eyes to the richness of our culinary offerings and inspired them to share that story with their clients. Ultimately, food is one of the most memorable parts of any journey, and I hope Tobago becomes a flavour they crave to experience in person.”
